Spanish-Style Chickpea and Spinach Stew

"Warm and flavorful Spanish Chickpea and Spinach Stew, featuring tender chickpeas, fresh spinach, and a touch of smoky paprika. A satisfying and healthy vegetarian meal."


Ingredients:

  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/4 tsp ground cumin
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 cups fresh spinach
  • 1/2 cup crushed tomatoes
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions:

  1. Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the garlic, smoked paprika, and cumin, and cook for another 1-2 minutes until fragrant.

  2. Add Chickpeas and Tomatoes: Stir in the chickpeas and crushed tomatoes. Season with salt and pepper, and simmer for 10 minutes, allowing the flavors to meld.

  3. Add Spinach: Add the fresh spinach to the pot, stirring until wilted, about 3 minutes. Adjust seasoning as needed.

  4. Serve: Ladle into bowls and garnish with fresh parsley. Enjoy this hearty stew with crusty bread or as a standalone meal!
