No-Bake Coconut Chocolate Bars

Ingredients:
- 1 1/2 cups shredded coconut
- 1/2 cup coconut oil, melted
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1/2 cup dark chocolate chips
- 1 tbsp coconut oil (for chocolate layer)
Instructions:
Prepare Coconut Layer: In a mixing bowl, combine shredded coconut, melted coconut oil, maple syrup (or honey), and vanilla extract. Mix until well combined.
Form Base: Press the coconut mixture evenly into the base of a lined baking pan, creating a flat layer. Place in the refrigerator for 15-20 minutes to set.
Make Chocolate Layer: Melt the chocolate chips with 1 tbsp coconut oil over low heat until smooth. Pour the chocolate over the chilled coconut layer, spreading it evenly.
Chill and Slice: Return the pan to the fridge for 30 minutes or until the chocolate is set. Once firm, cut into bars and enjoy!
