“Healthy Stuffed Sweet Potatoes with Mediterranean Vegetables”

Ingredients:
- 2 large sweet potatoes
- 1 tbsp olive oil
- 1 small red onion, finely chopped
- 1 bell pepper (any color), chopped
- 1 zucchini, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
Preheat Oven: Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork a few times and bake them on a baking sheet for 45-50 minutes, or until tender.
Prepare the Filling: While the sweet potatoes are baking, heat olive oil in a skillet over medium heat. Sauté the red onion until softened, about 3 minutes.
Add Vegetables: Add the bell pepper, zucchini, and cherry tomatoes. Season with oregano, salt, and pepper. Cook for 5-7 minutes until vegetables are tender.
Assemble: Once the sweet potatoes are done, cut them open lengthwise and fluff the inside with a fork. Spoon the sautéed vegetables into each potato.
Top with Garnish: Sprinkle with feta cheese, olives, and fresh parsley.
