Ingredients:

  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • 1 small red onion, finely chopped
  • 1 bell pepper (any color), chopped
  • 1 zucchini, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork a few times and bake them on a baking sheet for 45-50 minutes, or until tender.

  2. Prepare the Filling: While the sweet potatoes are baking, heat olive oil in a skillet over medium heat. Sauté the red onion until softened, about 3 minutes.

  3. Add Vegetables: Add the bell pepper, zucchini, and cherry tomatoes. Season with oregano, salt, and pepper. Cook for 5-7 minutes until vegetables are tender.

  4. Assemble: Once the sweet potatoes are done, cut them open lengthwise and fluff the inside with a fork. Spoon the sautéed vegetables into each potato.
