Makes: 4 - Prep 15 min - Cook 1:25 hour
Ingredients
1/2 cup (100g) Coles Brand Australian White Grain Quinoa, rinsed
1/3 cup (20g) rolled oats
2 tablespoons plain flour
1/4 cup (20g) grated parmesan (or vegetarian hard cheese)
1 carrot, grated
2 spring onions, sliced
2 Coles Brand Australian Free Range Eggs
Olive oil spray
4 Coles Brand Hamburger Rolls, split, toasted
Mayonnaise, to serve
Mixed salad leaves, to serve
Coles Brand Premium Roasted Capsicum Chutney, to serve
Cook the quinoa following packet directions. Set aside to cool completely. Place in a large bowl. Stir in the oats, flour, parmesan, carrot, spring onion and eggs. Season. Shape into 4 even-sized patties.
Spray a large frying pan with olive oil spray. Cook the patties over medium-high heat for 3-4 mins on each side.
Spread roll bases with mayonnaise. Top with mixed salad leaves, quinoa patties, chutney and roll tops to serve.
