So, Granny Pig made chocolate chip cookies for Peppa and George, so Aaron asked me to make some for him as well.
I must confess they came out absolutely delicious and indulgent but a bit too rich for the kids in my opinion so Note to self: When making these next time, for the kids, put less (WAY LESS) chocolate, and maybe some raisins or nuts, something like that.
Make around 20 medium / small cookies.
Ingredients
130g softened butter
1/2 cup caster sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1 egg
1 3/4 cups plain flour
1/2 cup dark chocolate chips
1/2 cup milk chocolate chips
Method
1 - Preheat oven 180ยบ . Line up a tray with baking paper. Actually you will need 2 trays.
2 - Cream butter, sugar(s) and vanilla until smooth. add egg end beat well. I used a handheld electric mixer.
3 - Add flour bit at a time (or not) and mix well.
4 - add chocolate and mix.
5 - Using a tablespoon for measurement, make little dough balls with your (Clean) hands, and you can press them down with the spoon for rustic look or between your hands for even look.
6 - Bake for around 10 to 15 min. 10 min marks will make them very soft in the middle (They harden up a bit when cooling down, so if you like them chewy, don't be scare to take them out of the oven on the 10 / 11 min mark.
You can keep them in air tight container for up to a week.
