I've never actually made this one, but I am going to...one day.

Ingredients
500g potatoes, peeled and sliced into 1 cm thick
300g Milk
300g double cream
1 large clove of garlic
1 sprig of thyme (Or a teaspoon)
extra virgin olive oil
100g of cheese ( I will probably use mixed, or just parmesan)
Salt and pepper to taste
- Preheat oven to 220º (200º fan forced). Add the milk, cream, garlic and thyme to a sauce pan and bring it to the boil. Remove from heat. Reserve
- Drizzle 1 tbsp of olive oil into a baking dish and them make a layer of potatoes, overlapping a bit one on the other. add some of the cheese, salt and pepper. Repeat until finished. Carefully pour the liquid mixture on top.
- Bake for 35 to 40 minutes util potato is a bit browned on top and soft when using a knife. If its browning too quick and potato is not cooked enough, cover with foil.
- serve immediately.
