Oaty Apple Muffins

1/3 cup caster sugar
1 tbsp black chia seeds
2 tsp Coles Brand Ground Ginger

1 egg, lightly beaten

1 cup canned apple pie filling
2 tbsp rolled oats
2 tbsp pepitas (pumpkin seeds)
