Summer Pea Pasta

Serves 4 - Prep 5 min Cook 10 minutes



Ingredients
400g Tagliatelle or other long pasta
1 2/3 cups (200g) frozen peas
2 tbsp olive oil
3 garlic cloves, finely chopped
1 long red chilli, seeded, finely chopped
grated rind of 2 lemons
1/2 cup torn basil
3 cups salad greens, to serve


  1. Cook tagliatelle in a large saucepan of salted boiling water according to packet directions. Add peas for last 2 mins of cooking time. Drain and return to pan
  2. Meanwhile, heat half of olive oil in a small frying pan on medium. Cook garlic and chilli for 1 min, until fragrant. Stir through lemon rind
  3. Add garlic mixture, basil and remaining olive oil to pasta and peas. Season to taste and toss to combine. Serve with Green salad.
